This pesto pasta is one of my favorite easy dinners that the whole family enjoys. It is fresh, cozy, and incredibly simple to pull together on a busy weeknight.

I love to blister the tomatoes just until they start to split so they stay plump and juicy. Adding creamy burrata right at the end makes the whole dish feel special and indulgent.

  • 12 ounces pasta of your choice
  • 2 cups cherry or grape tomatoes
  • 1/2 cup basil pesto
  • 1 ball fresh burrata cheese
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Optional: Parmesan cheese or balsamic glaze for serving

    Bring a large pot of salted water to a boil and cook the pasta according to the package directions.

    While the water heats up, add the olive oil to a large skillet over medium high heat.

    Add the cherry tomatoes to the skillet and cook them for about 5 to 7 minutes, stirring occasionally, until they start to blister and some begin to burst.

    Drain the pasta, making sure to reserve about a quarter cup of the cooking water.

    Add the cooked pasta and the pesto to the skillet with the tomatoes, tossing everything together until the noodles are well coated. If the sauce seems too thick, add a splash of the reserved pasta water.

    Transfer the pasta to a serving bowl and top with the burrata, tearing it into pieces so it melts into the warm noodles.

    Season with salt and pepper and add optional toppings like Parmesan or a drizzle of balsamic glaze before serving.

Store any leftovers in an airtight container in the fridge for up to two days. If you want a protein boost, this recipe goes great with grilled chicken or shrimp added on top. Serve this dish immediately so the burrata stays nice and creamy.
