If you love apple pie but feel intimidated by the crust work, this rustic apple galette is going to be your new favorite go to. It is meant to look messy and casual, so you can skip the stress of perfect crimping or lattice tops entirely.

My best tip is to keep your pie crust very cold before you roll it out. This ensures the butter stays solid, which gives you those beautiful, flaky layers we all love when you take a bite.

🧺 Ingredients

  • 1 store bought or homemade pie crust
  • 3 medium apples, peeled and sliced thin
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon butter, cut into small pieces
  • 1 egg, beaten for the egg wash
  • 1 tablespoon coarse sugar for sprinkling

👩‍🍳Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.

  2. 2

In a mixing bowl, toss the apple slices with the sugar, cinnamon, and lemon juice until they are well coated.

  3. 3

Roll your pie crust out on a floured surface into a large circle about 12 inches across, then transfer it to your prepared baking sheet.

  4. 4

Arrange the apple slices in the center of the crust, leaving about 2 inches of space around the edges.

  5. 5

Fold the edges of the dough up over the apples, overlapping as you go to create a rustic border.

  6. 6

Brush the edges of the dough with the beaten egg and sprinkle everything with the coarse sugar.

  7. 7

Dot the top of the apples with the small pieces of butter.

  8. 8

Bake for 30 to 35 minutes, or until the crust is golden brown and the apples are tender.

  9. 9

Let the galette cool for a few minutes on the pan before slicing.

💡 Tips

Serve this warm with a big scoop of vanilla ice cream or a dollop of whipped cream. If you have leftovers, keep them in an airtight container in the fridge for up to two days and warm them up in the oven for a few minutes to crisp the crust back up.
