When the leaves start to change color, I always crave something cozy and sweet. This pumpkin fudge has become a staple in my kitchen because it is incredibly simple to make, yet it tastes like you spent all day on it. It captures all the warmth of autumn in every single bite.

You do not need any special equipment like a candy thermometer to get this right. Just melt your ingredients, mix them together, and let the fridge do the hard work for you. It is a fantastic choice for holiday gatherings or just as a special snack to have on hand during the week.

🧺 Ingredients

  • 4 cups white chocolate chips
  • 1 cup sweetened condensed milk
  • 1/4 cup pure pumpkin puree
  • 1 teaspoon pumpkin pie spice

    Line a 9 x 9 inch baking pan with parchment paper and lightly grease it with cooking spray.

    Place the white chocolate chips in a large microwave safe bowl.

    Heat the chips in the microwave on 50 percent power for 1 to 2 minutes, making sure to stir every 30 seconds until the chocolate is completely smooth and melted.

    Add the sweetened condensed milk, pumpkin puree, and pumpkin pie spice to the melted chocolate.

    Stir the mixture quickly until well combined, as it will start to thicken as soon as you mix it.

Store your leftover fudge in an airtight container in the refrigerator for up to 2 weeks. You can also freeze it for up to 3 months, just be sure to let it thaw in the fridge overnight before you are ready to eat it.
