There is nothing quite like a pantry staple that saves the day when you are hungry and short on time. These chickpeas are one of my favorite go to meals because they are affordable, satisfying, and take just a few minutes to put together.

I love serving these over a bit of warm rice or just eating them straight from the bowl with a piece of crusty bread. If you want a little extra zing, feel free to squeeze a fresh lemon over the top right before you serve it.

  • 2 cans chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

    Heat the olive oil in a large skillet over medium heat.

    Add the minced garlic to the skillet and cook for about one minute until it smells wonderful, being careful not to let it brown.

    Stir in the drained chickpeas, oregano, paprika, salt, and pepper.

    Cook the mixture for 5 to 7 minutes while stirring occasionally until the chickpeas are heated through and lightly golden.

    Remove the pan from the heat and stir in the fresh parsley before serving.

Store any leftovers in an airtight container in the fridge for up to three days. You can serve this warm as a main dish or cold in a salad for an easy lunch the next day.
