This pot roast recipe is one of my favorites because it creates such a tender, flavorful meal in just over an hour. It is the kind of dish that makes the whole house smell wonderful while I check off my to do list.

I love serving this with carrots and onions that get soft and savory right in the pot. If you are new to using an Instant Pot, remember that you do not need to be intimidated. 🧺 Ingredients

  • 3 pound beef chuck roast
  • 1 tablespoon olive oil
  • 1 pound carrots, cut into chunks
  • 2 yellow onions, quartered
  • 2 cups beef broth
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

    Set your Instant Pot to the saute function and add the olive oil.

    Season the beef roast with salt and pepper on all sides, then sear it in the hot pot until browned.

    Remove the roast and pour in a splash of broth to scrape up any browned bits from the bottom.

    Place the roast back into the pot and add the carrots, onions, garlic, thyme, and the rest of the broth.

    Secure the lid, set the valve to sealing, and cook on high pressure for 60 minutes.

    Let the pressure release naturally for 15 minutes before opening the lid.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can shred the cold beef to use in sandwiches or tacos the next day.
