After all the Halloween candy is cleared away, there is nothing better than a warm and comforting meal to get back into the routine. This recipe is a staple in my kitchen because it is so low effort but tastes like you spent hours at the stove.

My best tip for this dish is to make sure your chicken pieces are cut into similar sizes so they cook evenly with the rice. It is a forgiving meal that always satisfies the whole family.

๐Ÿงบ Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken thighs, cut into bite sized pieces
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup white rice, uncooked
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1/2 cup frozen peas

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Heat the olive oil in a large pot or deep skillet over medium heat.

  2. 2

Add the chicken pieces and cook until they are browned on all sides.

  3. 3

Stir in the onion and garlic and cook for another two minutes until soft.

  4. 4

Add the rice to the pot and stir it for a minute to coat it in the juices.

  5. 5

Pour in the chicken broth and add the dried thyme, salt, and pepper.

  6. 6

Bring the liquid to a boil then turn the heat down to low.

  7. 7

Cover the pot and let it simmer for about twenty minutes until the rice is tender and the liquid is absorbed.

  8. 8

Stir in the frozen peas during the last two minutes of cooking.

  9. 9

Remove from the heat and let it rest for five minutes before serving.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can serve this as is, or sprinkle some fresh parsley and parmesan cheese on top to add a little extra brightness to the plate.
