These tacos are my go to when I want something exciting for a busy weeknight. They capture the classic sweet and savory spirit of traditional al pastor without needing hours of marinating time.

I love serving these because everyone can customize their own plate. The combination of roasted corn and creamy avocado makes them feel special enough for a weekend meal but quick enough for a Tuesday.

  • 1 pound pork tenderloin, thinly sliced
  • 1 cup pineapple chunks, finely chopped
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1 cup corn kernels
  • 2 ripe avocados
  • 1/2 cup salsa verde
  • 8 small corn tortillas
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
