If you love the crispy edges of a smash burger but want something a bit more fun for taco night, you have to try these. We take seasoned ground chicken and smash it right onto a tortilla, then cook it until it gets golden and delicious. It is a fantastic way to switch up your usual routine and get a big punch of flavor in less than thirty minutes.

I love topping these with a simple slaw made of romaine lettuce and ranch dressing to help cool down the spice from the Buffalo sauce. These are perfect for a busy weeknight when you need something satisfying but do not want to spend all evening in the kitchen.

๐Ÿงบ Ingredients

  • 1 pound ground chicken breast
  • 1/4 cup Buffalo hot sauce, plus extra for serving
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup finely chopped green onions, plus extra for garnish
  • 1 cup shredded sharp cheddar or pepper Jack cheese
  • 8 small flour street taco tortillas
  • 3 cups shredded romaine lettuce
  • 1/4 cup ranch dressing
  • Chopped fresh cilantro, optional
  • Canola or avocado oil for the pan

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

In a mixing bowl, combine the ground chicken, Buffalo sauce, garlic powder, salt, cayenne, and green onions. Mix gently and divide the mixture into 8 equal portions.

  2. 2

In a separate small bowl, toss the shredded lettuce with the ranch dressing and set it aside.

  3. 3

Place one portion of the chicken mixture onto each flour tortilla. Use your fingers to press the meat into a thin, even layer that reaches almost to the edges of the tortilla.

  4. 4

Heat a large skillet or griddle over medium high heat and brush it lightly with oil.

  5. 5

Place the tortillas meat side down into the hot pan. Use a sturdy spatula or a burger press to firmly press the tortilla into the meat so it creates a nice, thin crust. Cook for 2 to 3 minutes until the meat is browned and crisp.

  6. 6

Flip the tacos over and sprinkle about 2 tablespoons of cheese onto the chicken. Cook for another 2 minutes until the cheese is melted and the tortilla is crispy.

  7. 7

Serve hot topped with the ranch slaw, extra green onions, fresh cilantro, and a little extra drizzle of Buffalo sauce if you like things spicy.

๐Ÿ’ก Tips

These tacos are best enjoyed immediately while they are hot and crispy. If you need to store leftovers, it is best to keep the uncooked chicken mixture in the refrigerator for up to 2 days and assemble your fresh tacos right before you are ready to cook them.
