This cheeseburger quesadilla is a total staple in my kitchen. It is one of those meals that always hits the spot when you want something satisfying, beefy, and quick to put on the table.

My family loves this because it combines two of our favorite comfort foods into one. Use your favorite flour tortillas and a good melting cheese to get the best results every time.

  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 cups shredded cheddar or colby jack cheese
  • 1/2 cup diced pickles
  • 1/4 cup ketchup
  • 1/4 cup mayonnaise
  • 1 tablespoon yellow mustard

    Brown the ground beef in a large skillet over medium heat until it is fully cooked through.

    Drain any excess grease from the skillet and stir in the garlic powder, onion powder, salt, and pepper.

    Remove the beef from the skillet and wipe the pan clean.

    Whisk the ketchup, mayonnaise, and mustard together in a small bowl to make your dipping sauce.

    Place a tortilla in the skillet over medium heat, sprinkle half of the skillet with cheese, top with some cooked beef and diced pickles, then fold the tortilla in half.

Serve these with extra pickles on the side for a nice crunch. If you have leftovers, keep them in an airtight container in the fridge and reheat them in a dry skillet to get the tortilla crispy again.
