Chicken and Sweet Potato Harvest Bowl
A cozy and wholesome bowl filled with roasted sweet potatoes, juicy chicken, and fresh apples.
recipesbynani.comThis harvest bowl has become a staple in my kitchen because it perfectly balances sweet and savory flavors. It is the kind of meal that feels like a big hug in a bowl, especially on days when you want something healthy but still very satisfying.
My best tip for this recipe is to roast your sweet potatoes until they have nice caramelized edges. Those crispy brown bits add so much sweetness and texture to every bite of the bowl.
๐งบ Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 pound chicken breast, cut into bite sized pieces
- 2 cups cooked white or brown rice
- 1 crisp apple, chopped
- 1/2 cup sliced almonds
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 2 tablespoons honey or maple syrup
๐ฉโ๐ณInstructions
- 1
Preheat your oven to 400 degrees Fahrenheit.
- 2
Toss the cubed sweet potatoes with one tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 25 minutes or until tender.
- 3
While the potatoes roast, heat the remaining oil in a large skillet over medium heat.
- 4
Add the chicken pieces to the skillet and season with thyme, salt, and pepper. Cook until the chicken is golden brown and cooked through.
- 5
Drizzle the honey or maple syrup over the chicken during the last minute of cooking and stir to coat well.
- 6
To assemble, divide the cooked rice into bowls.
- 7
Top each bowl with a portion of the roasted sweet potatoes, glazed chicken, fresh apple chunks, and a sprinkle of sliced almonds.
๐ก Tips
You can store the leftovers in an airtight container in the fridge for up to three days. I recommend adding the fresh apples right before you serve so they stay nice and crunchy. This bowl is also delicious served warm or at room temperature.
