There is something so special about the smell of mushrooms and garlic simmering in a rich wine sauce. This chicken marsala is one of my favorite meals because it feels fancy enough for guests but is simple enough to whip up on a busy Tuesday night.

My secret to the best sauce is to make sure you really brown the chicken well before adding the liquid. Those browned bits in the pan add so much deep flavor that you just cannot skip.

🧺 Ingredients

  • 2 chicken breasts, sliced into cutlets and pounded thin
  • 1/3 cup all purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces sliced cremini mushrooms
  • 2 cloves garlic, minced
  • 1/2 cup dry Marsala wine
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 tablespoons chopped fresh parsley

    Mix the flour, salt, and pepper on a shallow plate.

    Dredge each piece of chicken in the flour mixture until lightly coated, shaking off any excess.

    Heat the olive oil and one tablespoon of butter in a large skillet over medium high heat.

    Cook the chicken for about 3 to 4 minutes per side until golden brown and cooked through, then remove the chicken from the pan and set it aside.

    Add the remaining tablespoon of butter to the same pan and sauté the mushrooms until they are soft and golden brown.

    Stir in the garlic and cook for one minute until fragrant.

    Pour in the Marsala wine and use a wooden spoon to scrape up all the flavorful browned bits from the bottom of the pan.

    Add the chicken broth and simmer for about 5 minutes until the liquid reduces slightly.

    Stir in the heavy cream and return the chicken to the pan to warm through.

    Garnish with fresh parsley before serving.

💡 Tips

Serve this over a bed of buttery noodles or creamy mashed potatoes to soak up all that delicious sauce. If you have leftovers, keep them in an airtight container in the fridge for up to two days and reheat gently on the stove.
