There is something about a platter of deviled eggs that just feels like home. They are a staple at my family gatherings because they are simple, delicious, and disappear from the table faster than I can make them.

My favorite trick for the best texture is to pass the cooked yolks through a fine mesh sieve before mixing them with the mayonnaise. This makes the filling incredibly smooth and light, which makes every bite feel special.

๐Ÿงบ Ingredients

  • 12 large eggs
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon white vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Paprika for dusting
  • Fresh chives or parsley for garnish

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Place the eggs in a large pot and cover them with cold water by an inch.

  2. 2

Bring the water to a boil, then remove the pot from the heat and cover it with a lid.

  3. 3

Let the eggs sit in the hot water for 12 minutes before transferring them to an ice water bath to cool completely.

  4. 4

Peel the cooled eggs, slice them in half lengthwise, and gently pop the yolks into a medium bowl.

  5. 5

Mash the yolks with a fork or press them through a sieve for a smoother texture.

  6. 6

Stir in the mayonnaise, mustard, vinegar, salt, and pepper until the mixture is creamy and smooth.

  7. 7

Spoon or pipe the yolk mixture into the empty egg white halves.

  8. 8

Dust the tops with a little paprika and garnish with chopped fresh herbs before serving.

๐Ÿ’ก Tips

Store your leftover deviled eggs in an airtight container in the refrigerator for up to two days. For the best presentation, wait to sprinkle the paprika and fresh herbs until right before you are ready to serve.
