There is nothing quite as refreshing as a cold cucumber salad when the sun is shining. It is one of those simple dishes that everyone loves because it is light, crunchy, and pairs perfectly with just about any grilled meat or main course you decide to serve.

My biggest tip for this one is to slice your cucumbers as thin as you possibly can. If you have a mandoline slicer, go ahead and use it, but a sharp knife works just as well. Keeping the slices thin helps them absorb all that lovely dressing.

  • 2 large English cucumbers, thinly sliced
  • 1/2 red onion, very thinly sliced
  • 1/3 cup apple cider vinegar
  • 2 tablespoons water
  • 2 tablespoons white sugar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh dill, chopped
