There is nothing quite like the taste of fresh tomatoes straight from the garden during the summer months. This pasta is a staple in my kitchen because it uses just a few simple ingredients to create a meal that tastes like pure sunshine on a plate.

My biggest tip is to use the best tomatoes you can find. If you have different colors or sizes, mix them together to add a beautiful variety to your bowl. Just toss them with olive oil and garlic, and let the heat of the pasta do the rest of the work.

๐Ÿงบ Ingredients

  • 1 pound spaghetti or linguine
  • 2 pounds fresh ripe tomatoes, chopped into bite sized pieces
  • 3 cloves garlic, minced
  • 1/2 cup extra virgin olive oil
  • 1 cup fresh basil leaves, torn
  • 1/2 cup grated parmesan cheese
  • Salt and black pepper to taste

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Bring a large pot of salted water to a boil and cook the pasta according to the package directions until it is al dente.

  2. 2

While the pasta cooks, combine the chopped tomatoes, minced garlic, olive oil, salt, and pepper in a large mixing bowl.

  3. 3

Drain the cooked pasta and add it immediately to the bowl with the tomato mixture.

  4. 4

Toss everything together well so the heat of the noodles begins to soften the tomatoes slightly.

  5. 5

Stir in the fresh basil and parmesan cheese right before serving.

  6. 6

    Serve immediately while warm.

๐Ÿ’ก Tips

This dish is best served immediately, but if you have leftovers, keep them in an airtight container in the fridge for up to two days. You can also add some grilled chicken or white beans if you want to add a bit of extra protein to your meal.
