My favorite way to keep the meat juicy is to let it marinate for at least thirty minutes before it hits the heat. If you have extra time, you can let it sit in the fridge for a few hours to really soak up all those wonderful Mediterranean flavors.

  • 4 chicken breasts
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • Fresh parsley for garnish
