Tiramisu is one of my favorite desserts to make because it feels so elegant despite being quite simple to put together. Everyone loves the contrast between the bold espresso flavor and the smooth, sweet cream, and it is always a hit at dinner parties.

My best tip for the perfect texture is to make sure you do not soak the ladyfingers for too long. Just a quick dip is all you need so the cake stays soft but does not turn into mush when you try to slice it later.

  • 6 large egg yolks
  • 1 cup white sugar
  • 1 1/4 cups mascarpone cheese
  • 1 1/2 cups heavy whipping cream
  • 1 cup cold espresso
  • 24 ladyfinger cookies
  • 2 tablespoons unsweetened cocoa powder

    Beat the egg yolks and sugar in a large bowl until the mixture is pale and thick.

    Gently stir in the mascarpone cheese until the mixture is smooth and combined.

    In a separate bowl, whip the heavy cream until stiff peaks form.

    Carefully fold the whipped cream into the mascarpone mixture until fully incorporated.

    Pour the cold espresso into a shallow dish.

    Quickly dip each ladyfinger into the coffee, turning them over once to coat, but do not let them get soggy.

    Arrange a layer of the soaked ladyfingers in the bottom of a square baking dish.

    Spread half of the mascarpone cream mixture over the ladyfingers.

    Repeat with the remaining ladyfingers and the rest of the cream.

    Dust the top with cocoa powder using a fine sieve.

    Refrigerate for at least four hours, or ideally overnight, to let the flavors meld before serving.

Store your leftovers in the refrigerator covered tightly with plastic wrap for up to three days. For the cleanest slices, use a serrated knife and wipe it off with a damp cloth between each cut.
