Easy Upside Down Pear Tart
A golden, flaky French style tart made with sweet caramelized pears and buttery puff pastry.
recipesbynani.comI love making this tart when the weather starts to cool down and the markets are full of fresh pears. It is much easier than it looks because we bake it upside down to keep the pastry light and crispy while the fruit gets nice and soft.
The secret to a beautiful tart is using firm pears like Bosc or Anjou. These varieties keep their shape in the oven and create a lovely flavor that pairs perfectly with the cinnamon and honey.
๐งบ Ingredients
- 6 tablespoons honey
- 6 tablespoons unsalted butter, sliced into 6 pieces
- 2 tablespoons light brown sugar
- 1 and a half teaspoons ground cinnamon
- Half a teaspoon flaky sea salt
- 4 to 5 firm Bosc or Anjou pears, sliced thin
- 1 sheet frozen puff pastry, thawed
- 1 large egg, beaten with a splash of water
๐ฉโ๐ณInstructions
- 1
Preheat your oven to 400 degrees and line a large baking sheet with parchment paper.
- 2
Drizzle the honey onto the parchment paper in six small puddles, arranging them in two rows of three.
- 3
Place one piece of butter in the center of each honey puddle.
- 4
Sprinkle the brown sugar, cinnamon, and salt evenly over the butter pieces.
- 5
Arrange the pear slices over the butter in neat, overlapping rows until you have three long columns of fruit.
- 6
Gently lay your sheet of puff pastry over the top of all the pears, tucking the edges in slightly if needed.
- 7
Brush the top of the pastry with the egg wash to help it turn golden brown.
- 8
Bake for about 25 minutes or until the pastry is puffed and a deep golden color.
- 9
Let the tart cool for five minutes, then carefully flip the whole thing over onto a serving board or platter so the pears are on top.
๐ก Tips
Serve this warm with a scoop of vanilla ice cream or a little whipped cream. You can store any leftovers in the fridge for up to two days and just pop them back in the oven for a few minutes to crisp up the pastry again.
