These raspberry tartlets, or Tartelettes aux Framboises, bring that bakery experience right into your home kitchen. They are elegant, delicious, and always a crowd pleaser when you have guests over for coffee or dessert.

I love this recipe because the almond cream filling is so simple to whip up. You can bake your tart shells and make your filling ahead of time to make hosting a breeze. Just assemble them, pop them in the oven, and you have a stunning dessert ready to go.

  • 1 recipe pre baked tartlet crust shells
  • 100g unsalted butter, softened
  • 100g caster sugar
  • 100g almond meal
  • 2 large eggs, room temperature
  • 1 cup fresh raspberries
  • 2 tablespoons apricot jam, warmed and strained for glaze
  • 1 tablespoon finely chopped pistachios for garnish

    In a mixing bowl, beat the softened butter and caster sugar together until the mixture is smooth and creamy.

    Spoon the almond cream into your pre baked tartlet shells, filling them about three quarters of the way full.

    Bake for 15 to 20 minutes or until the almond cream is golden and set.
