This tuna and white bean salad is a favorite in my kitchen because it is so easy to toss together on a busy day. It feels light but filling enough to keep you going until dinner time.

My best tip is to use high quality tuna packed in olive oil. The oil adds a wonderful richness to the beans that makes the whole dish taste much better than using tuna packed in water.

  • 2 cans of tuna packed in olive oil
  • 1 can of cannellini beans, rinsed and drained
  • 1/4 cup sun dried tomatoes, chopped
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste

    Drain the tuna slightly, but leave a little bit of the oil in the bowl for flavor.

    In a medium mixing bowl, combine the tuna and the white beans.

    Pour the lemon juice over the mixture and toss everything gently until combined.
