Classic Tuna and White Bean Salad

My best tip is to use high quality tuna packed in olive oil. The oil adds a wonderful richness to the beans that makes the whole dish taste much better than using tuna packed in water.

- 2 cans of tuna packed in olive oil
- 1 can of cannellini beans, rinsed and drained
- 1/4 cup sun dried tomatoes, chopped
- 1/4 cup red onion, finely diced
- 1/4 cup fresh parsley, chopped
- 1 tablespoon fresh lemon juice
- Salt and black pepper to taste
