There is something so special about a hearty lasagna on a busy weeknight. This recipe is a favorite in my kitchen because it sneaks in plenty of colorful veggies while keeping all that classic cheesy comfort we crave. It feels like a rainbow on your plate and is sure to get even the picky eaters excited for dinner.

My best advice for this one is to make sure your roasted vegetables are chopped into bite sized pieces. It makes the lasagna much easier to slice and serve once it comes out of the oven. If you have extra time, assemble the whole thing the day before and let it sit in the fridge, as the flavors meld together beautifully overnight.

  • 1 box lasagna noodles
  • 2 cups cherry tomatoes
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 onion, diced
  • 15 ounces ricotta cheese
  • 1/2 cup basil pesto
  • 3 cups shredded mozzarella cheese
  • 1 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

    Preheat your oven to 400 degrees Fahrenheit.

    Toss the cherry tomatoes, zucchini, bell pepper, and onion with olive oil, salt, and pepper on a baking sheet. Roast for 20 minutes until tender.

    Cook the lasagna noodles according to the package directions, then drain them.

    In a small bowl, stir together the ricotta cheese and the basil pesto.

    Lower the oven temperature to 375 degrees Fahrenheit.
