There is nothing better than coming home to the smell of a warm, cheesy meal waiting in the slow cooker. This soup has all the rich tomato flavors and hearty noodles of a traditional lasagna, but it is much easier to put together on a busy weeknight.

My favorite thing about this recipe is how customizable it is. Feel free to stir in some fresh spinach at the end if you want a little extra green, or serve it with a big piece of crusty garlic bread to soak up the broth.

  • 1 pound ground Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (15 ounces) tomato sauce
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 8 ounces lasagna noodles, broken into small pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste

    Brown the ground sausage and onion in a skillet over medium heat until the meat is fully cooked. Drain any excess fat.

    Add the minced garlic and cook for one minute until fragrant, then transfer the mixture to your slow cooker.

    Stir in the crushed tomatoes, tomato sauce, beef broth, oregano, and basil.

    Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours.

    About 30 minutes before you are ready to serve, stir in the broken lasagna noodles. Cover and continue cooking until the noodles are tender.

    In a small bowl, mix the ricotta cheese with a little bit of the hot soup broth to thin it out.

    Ladle the soup into bowls, add a dollop of the ricotta mixture, and top with mozzarella and parmesan cheese.

Store any leftovers in an airtight container in the fridge for up to three days. The noodles will soak up the broth over time, so you may need to add a splash of water or extra beef broth when reheating. You can also freeze this soup without the cheese topping for a quick meal later.
