There is something so comforting about a big bowl of creamy soup when the weather gets chilly. This recipe is a fantastic copycat version of the classic Olive Garden soup, featuring tender chicken, pillowy gnocchi, and plenty of fresh vegetables in a rich broth.

Since this comes together in only 30 minutes, it is perfect for those busy weeknights when you want a homemade meal without spending hours in the kitchen. Using store bought rotisserie chicken makes the prep work incredibly fast.

🧺 Ingredients

  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 cup yellow onion, diced
  • 1/2 cup celery, diced
  • 2 cloves garlic, minced
  • 1/4 cup all purpose flour
  • 2 cups half and half
  • 2 cups chicken broth
  • 1 cup shredded carrots
  • 1 cup spinach, chopped
  • 1 cup cooked chicken, shredded or chopped
  • 16 ounces potato gnocchi
  • 1 tablespoon fresh thyme
  • Salt and black pepper to taste

👩‍🍳Instructions

  1. 1

Place a large pot over medium high heat and melt the butter with the olive oil.

  2. 2

Add the onion, celery, and garlic to the pot. Sauté until the vegetables are soft and tender.

  3. 3

Stir in the flour to coat the vegetables and cook for about 1 minute to remove the raw flour taste.

  4. 4

Slowly pour in the half and half and chicken broth, whisking or stirring constantly until the mixture begins to thicken.

  5. 5

Add the thyme, carrots, spinach, cooked chicken, and potato gnocchi to the pot.

  6. 6

Simmer for about 5 minutes until the gnocchi is tender and the soup has reached your desired thickness.

  7. 7

Season with salt and pepper to your liking and serve while warm.

💡 Tips

To keep your soup smooth and creamy, be sure to keep it at a gentle simmer rather than a rolling boil, as high heat can sometimes cause the cream to separate. If you have leftovers, store the soup in an airtight container in the fridge for up to 3 days, but keep in mind that the gnocchi may soften further as it sits in the liquid.
