There is nothing quite like coming home to the smell of spices filling the kitchen. This butter chicken is a favorite in our house because it is so easy to prepare but tastes like it has been simmering on the stove all day long.

I love serving this with warm naan bread or a fluffy pile of basmati rice to soak up every last drop of that velvety sauce. If you want a little extra kick, feel free to add a pinch more red chili powder when you are seasoning the chicken.

  • 2 pounds boneless skinless chicken thighs, cut into bite sized pieces
  • 1 large yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon ginger, freshly grated
  • 2 teaspoons garam masala
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, cut into small cubes
  • 1 cup heavy cream
  • 1/2 cup plain Greek yogurt
  • Fresh cilantro for garnish

    Place the chicken pieces into the bottom of your slow cooker.

    Add the diced onion, minced garlic, tomato paste, and all the dry spices. Toss everything together so the chicken is well coated.

    Distribute the cubed butter over the top of the chicken mixture.

    Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until the chicken is tender and cooked through.

    Stir in the heavy cream and Greek yogurt until the sauce is smooth and creamy.

    Serve warm over rice or with a side of naan, topped with a sprinkle of fresh cilantro.

Store any leftovers in an airtight container in the fridge for up to three days. You can also freeze this meal for a quick dinner later, just make sure to add the cream and yogurt after you thaw and reheat it on the stove.
