There is something truly special about creamy cheesy potatoes. My family asks for this recipe every single holiday because the flavor is so much better than the versions made with canned soup.

Since this cooks in your slow cooker, it frees up your oven space for the main course. Just toss everything in, give it a stir, and let the magic happen while you get everything else ready.

🧺 Ingredients

  • 30 ounces frozen shredded hash browns, thawed
  • 1/2 cup unsalted butter, melted
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup sour cream
  • 1/2 cup whole milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups cornflakes, crushed
  • 2 tablespoons butter, melted (for the topping)

πŸ‘©β€πŸ³Instructions

  1. 1

Spray the inside of your slow cooker with nonstick cooking spray.

  2. 2

In a large bowl, whisk together the melted butter, sour cream, milk, garlic powder, onion powder, salt, and pepper.

  3. 3

Add the shredded hash browns and one and a half cups of the shredded cheese to the bowl. Stir until everything is well combined.

  4. 4

Pour the mixture into the slow cooker and spread it out evenly.

  5. 5

Top the potatoes with the remaining half cup of shredded cheese.

  6. 6

Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours.

  7. 7

Before serving, combine the crushed cornflakes with the two tablespoons of melted butter. Sprinkle this over the top of the potatoes.

  8. 8

Replace the lid for another 10 to 15 minutes to let the topping get warm and slightly crisp.

πŸ’‘ Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat them in the microwave or in a baking dish in the oven until bubbly. For a little extra kick, try adding a few diced jalapeΓ±os to the mixture.
