There is nothing quite like a big bowl of creamy pasta to make a weeknight feel special. My family asks for this Chicken Alfredo constantly because the sauce is so much richer than anything you can buy in a jar.

My secret for the best results is to grate your own Parmesan cheese if you have the time. The pre shredded kind is coated in starch that prevents it from melting into that smooth, silky sauce we all love.

๐Ÿงบ Ingredients

  • 1 pound fettuccine pasta
  • 2 boneless skinless chicken breasts, sliced
  • 2 tablespoons olive oil
  • 1/2 cup butter
  • 2 cups heavy cream
  • 2 cloves garlic, minced
  • 1 1/2 cups freshly grated Parmesan cheese
  • 1/2 cup grated Romano cheese
  • Salt and black pepper to taste
  • Fresh parsley for garnish

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Bring a large pot of salted water to a boil and cook the fettuccine according to the package directions until al dente.

  2. 2

While the water heats up, heat the olive oil in a large skillet over medium high heat.

  3. 3

Season the chicken slices with salt and pepper then cook them in the skillet until they are golden brown and cooked through. Remove the chicken from the pan and set it aside.

  4. 4

In the same skillet, melt the butter over medium heat and add the minced garlic, cooking for about one minute until it smells wonderful.

  5. 5

Pour in the heavy cream and let it simmer for about five minutes until it thickens slightly.

  6. 6

Whisk in the Parmesan and Romano cheeses until the sauce is completely smooth and melted.

  7. 7

Add the cooked chicken and pasta into the sauce, tossing everything well to coat the noodles evenly.

  8. 8

Serve warm with a little extra cheese and fresh parsley on top.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. When reheating, add a tiny splash of milk or water to the pan to help the sauce loosen up and regain its creamy texture.
