There is something special about making your own hummus right in your kitchen. It is so fresh and creamy that you will find yourself wanting to put it on everything from warm pita bread to crunchy veggie sticks.

My favorite trick for getting the best texture is to peel your chickpeas if you have the extra time. It makes a big difference in how smooth the final result turns out, but it is still delicious if you skip that part.

  • 1 can of chickpeas, drained and rinsed
  • 1/4 cup fresh lemon juice
  • 1/4 cup well stirred tahini
  • 1 small garlic clove, minced
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • 2 to 3 tablespoons water

    Place the tahini and lemon juice in a food processor and blend for about one minute until the mixture looks whipped.

    Add the olive oil, minced garlic, cumin, and a pinch of salt to the processor and blend for another thirty seconds.

    Add the chickpeas to the bowl and blend for one minute, then scrape down the sides with a spatula.

    With the processor running, slowly add the water one tablespoon at a time until the hummus reaches your desired creamy consistency.

    Taste and add more salt or lemon juice if you think it needs a little extra brightness.

๐Ÿ’ก Tips

Store your leftover hummus in an airtight container in the fridge for up to one week. You can serve it with a drizzle of olive oil and a sprinkle of paprika on top to make it look beautiful for guests.
