There is nothing quite like a warm bowl of queso to get a party started. This recipe is my go to when I need something cheesy and smooth that comes together in just a few minutes on the stove.

My best tip is to grate your cheese fresh from the block instead of using the bagged shredded stuff. The pre shredded cheese is coated in potato starch which keeps it from melting down into that lovely silky texture we all love.

🧺 Ingredients

2 tablespoons butter
1/4 cup onion, finely diced
2 cloves garlic, minced
2 tablespoons all purpose flour
1 cup whole milk
8 ounces sharp cheddar cheese, freshly shredded
4 ounces pepper jack cheese, freshly shredded
1/4 cup diced canned green chiles
1 pinch chili powder
Salt and black pepper to taste

Melt the butter in a medium saucepan over medium heat.

Add the onion and cook until it is soft and translucent, then stir in the garlic for about thirty seconds.

Whisk in the flour and cook for one minute to create a light roux.

Slowly pour in the milk while whisking constantly so no lumps form.

Cook the mixture for about three minutes until it thickens slightly.

Lower the heat to low and add the cheeses a handful at a time, stirring until each batch is melted before adding more.

Fold in the green chiles and chili powder, then season with a little salt and pepper.

Serve immediately while hot with your favorite tortilla chips.

💡 Tips

Keep the heat low when melting your cheese to prevent it from splitting or becoming grainy. If you have leftovers, store them in an airtight container in the fridge and reheat gently on the stove with a splash of milk.
