There is nothing quite like coming home to the smell of a meal that has been cooking all day. This lemon chicken is a favorite in my house because the sauce is creamy and packs a punch of flavor, while the chicken stays juicy and tender every single time.

My best tip is to whisk your sauce well before pouring it over the chicken to make sure the parmesan cheese melts perfectly into the lemon and garlic base. If you like a thicker sauce, stir in a splash of cream or a little cornstarch slurry during the last thirty minutes of cooking.

๐Ÿงบ Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1/2 cup chicken broth
  • 1/3 cup fresh lemon juice
  • 1/4 cup melted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 cup grated parmesan cheese
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • Fresh parsley for garnish

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Place the chicken breasts into the bottom of your slow cooker.

  2. 2

In a small bowl, whisk together the chicken broth, lemon juice, melted butter, minced garlic, and oregano.

  3. 3

Pour the sauce mixture over the chicken breasts.

  4. 4

Cover and cook on low for 4 hours or on high for 2 hours.

  5. 5

Remove the chicken carefully from the pot and set it aside on a plate.

  6. 6

Stir the parmesan cheese and heavy cream into the liquid remaining in the slow cooker.

  7. 7

Return the chicken to the pot or serve it on plates topped with a generous ladle of the creamy sauce.

  8. 8

Garnish with fresh parsley before serving.

๐Ÿ’ก Tips

This dish is perfect served over a bed of fluffy white rice or buttery egg noodles to soak up the extra sauce. If you have leftovers, keep them in an airtight container in the fridge for up to three days and reheat gently on the stove.
