I always find myself reaching for this recipe when the weather turns cold. It is so satisfying to watch simple onions turn into something sweet and golden, and the way the pasta cooks right in the broth makes the sauce so rich and velvety.

The secret is all in the patience you show your onions. If you let them take their time to caramelize properly, you will be rewarded with a deep flavor that tastes like you spent all day in the kitchen.

๐Ÿงบ Ingredients

  • 3 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine
  • 4 cups beef broth
  • 1 pound dry short pasta like penne or rigatoni
  • 1 tablespoon fresh thyme leaves
  • 1/2 cup heavy cream
  • 1 cup shredded Gruyere cheese
  • Salt and black pepper to taste

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Melt the butter and olive oil in a large pot or Dutch oven over medium heat.

  2. 2

Add the sliced onions and cook them for about 30 minutes, stirring often, until they are soft and a deep golden brown.

  3. 3

Stir in the minced garlic and cook for just a minute until it becomes fragrant.

  4. 4

Pour in the white wine and use a wooden spoon to scrape all the tasty brown bits off the bottom of the pot.

  5. 5

Add the beef broth, fresh thyme, and the dry pasta to the pot.

  6. 6

Bring the mixture to a boil, then turn the heat down to a simmer and cover the pot.

  7. 7

Cook for about 12 minutes or until the pasta is tender and most of the liquid has been absorbed into a sauce.

  8. 8

Stir in the heavy cream and half of the Gruyere cheese until everything is smooth.

  9. 9

Season with salt and pepper to your liking and top with the rest of the cheese before serving.

๐Ÿ’ก Tips

If the sauce gets too thick, you can stir in a small splash of extra broth. This dish keeps well in the fridge for three days and tastes even better the next day.
