There is something special about the smell of honey and cinnamon filling the kitchen while these bake. These crackers have a wonderful crunch that makes them perfect for munching on straight from the jar, but they are also sturdy enough to hold up for a classic s'more.

My favorite way to use these is for a homemade pie crust or an icebox cake. If you find your dough is getting a bit too soft while you work with it, just pop it into the fridge for ten minutes and it will be much easier to roll out.

🧺 Ingredients

  • 1 and 1/2 cups all purpose flour
  • 1 cup whole wheat flour
  • 1/2 cup dark brown sugar, packed
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 1/3 cup honey
  • 5 tablespoons milk
  • 1 teaspoon vanilla extract

    Whisk together the all purpose flour, whole wheat flour, brown sugar, baking soda, salt, and cinnamon in a large bowl.

    Add the softened butter and use your fingers or a pastry cutter to work it into the dry ingredients until the mixture looks like coarse sand.

    Stir in the honey, milk, and vanilla extract until a dough forms.

    Divide the dough in half and wrap each piece in plastic. Chill the dough in the refrigerator for at least one hour.

    Preheat your oven to 350 degrees Fahrenheit and line two baking sheets with parchment paper.

    Roll out each piece of dough on a lightly floured surface until it is about 1/8 inch thick.

    Cut the dough into squares or rectangles and use a fork to prick holes all over each cracker.

    Bake for 12 to 15 minutes or until the edges are golden brown.

    Let the crackers cool completely on the baking sheet so they crisp up properly as they sit.

💡 Tips

Store these in an airtight container at room temperature for up to one week. If they lose their crunch over time, you can crisp them up in a warm oven for a few minutes. They are great served with a side of chocolate or used as a base for cheesecake crusts.
