My crockpot chicken spaghetti is a favorite in our house because it is so easy to put together. You just toss the ingredients into your slow cooker, let it do all the hard work, and you end up with tender chicken in a rich, savory sauce that the whole family will love.

This recipe is wonderful because it makes a large batch, which is great if you have a hungry crowd or want some extra for the next day. If you want to change things up, you can easily stir in some frozen peas or broccoli florets right at the end for an extra pop of color and nutrition.

🧺 Ingredients

  • 1.5 pounds boneless skinless chicken breasts
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 cans (10.5 ounces each) condensed cream of chicken soup
  • 1 can (10 ounces) diced tomatoes and green chiles, undrained
  • 1 cup diced yellow onion
  • 2 teaspoons minced garlic
  • 12 ounces spaghetti noodles, cooked
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream

    Lightly spray your slow cooker with cooking spray to prevent sticking.

    Place the chicken breasts in the slow cooker and season them with the onion powder, garlic powder, paprika, salt, and pepper.

    Pour the cans of cream of chicken soup, the undrained diced tomatoes and green chiles, the onion, and the minced garlic over the chicken.

    Cover and cook on LOW for 6 to 8 hours or on HIGH for 4 to 5 hours until the chicken is tender and cooked through.

    Use two forks to shred the chicken directly in the pot.

    Stir in the cooked spaghetti noodles, shredded cheddar cheese, and sour cream until everything is well combined and the cheese has melted.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to 5 days. When reheating, I like to add a splash of reserved pasta water or a little milk to bring back that creamy, smooth consistency.
