There is something so comforting about a big skillet full of warm, saucy goodness. This recipe is a total lifesaver on busy weeknights when you want a hearty meal but do not want to spend the whole evening washing dishes.

My favorite thing about this dish is how filling it is thanks to the sweet potatoes and black beans. If you want a little extra spice, feel free to add a pinch of chili powder or some diced jalapeños right into the sauce.

🧺 Ingredients

  • 1 tablespoon olive oil
  • 2 cups peeled and cubed sweet potatoes
  • 1 cup diced onion
  • 2 cloves minced garlic
  • 1 can black beans, rinsed and drained
  • 1.5 cups red enchilada sauce
  • 0.5 cup water or vegetable broth
  • 1 cup vegan shredded cheese
  • Fresh cilantro for garnish
  • Sliced avocado for serving

👩‍🍳Instructions

  1. 1

Heat the olive oil in a large skillet over medium heat.

  2. 2

Add the sweet potatoes and onion to the pan. Sauté for about 5 to 7 minutes until the onions are soft and the potatoes start to brown.

  3. 3

Stir in the garlic and cook for another minute until fragrant.

  4. 4

Add the black beans, enchilada sauce, and water. Stir well to combine everything.

  5. 5

Bring the liquid to a light simmer, then cover the pan and cook for 10 to 12 minutes. The potatoes should be tender and easy to pierce with a fork.

  6. 6

Remove the lid and sprinkle the vegan cheese over the top. Cover the pan again for a minute or two until the cheese is melted and bubbly.

  7. 7

Remove from the heat and garnish with fresh cilantro and avocado slices before serving.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat this easily in the microwave or on the stovetop with a splash of water to keep the sauce loose.
