There is nothing quite like a light and creamy dessert on a warm afternoon. This cherry tiramisu is one of my favorite ways to use fresh summer fruit because it is so easy to assemble and always impresses my guests.

You can easily prepare this a day in advance, which actually helps the flavors meld together beautifully. My best advice is to make sure you let it chill in the fridge for at least four hours so the ladyfingers have enough time to soak up all that wonderful cherry flavor.

  • 2 cups fresh cherries, pitted and halved
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 16 ounces mascarpone cheese, room temperature
  • 1 cup heavy whipping cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • Fresh cherries for topping

    Combine the halved cherries, granulated sugar, and water in a small saucepan over medium heat.

    Simmer the mixture for about 10 minutes until the cherries are soft and a syrup has formed, then let it cool completely.

    In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.

    Gently fold the mascarpone cheese into the whipped cream until the mixture is smooth and combined.

    Dip each ladyfinger briefly into the cooled cherry syrup and arrange a layer in the bottom of a square baking dish.

    Spread half of the mascarpone mixture over the ladyfingers, then scatter half of the cooked cherries on top.

    Repeat the layers once more with the remaining ladyfingers, cream, and cherries.

    Cover the dish and refrigerate for at least 4 hours before serving.

Store any leftovers in an airtight container in the refrigerator for up to three days. For a beautiful presentation, top the dessert with extra fresh cherries and a dusting of cocoa powder right before you serve it to your family.
