There is something so satisfying about a hearty bowl packed with all your favorite fajita flavors. It is one of my go to meals when I want something fresh and filling without spending hours in the kitchen.

My biggest tip is to slice your peppers and onions into thin strips so they cook at the same rate as the chicken. You can even prep the veggies the night before to make your dinner time even faster.

🧺 Ingredients

  • 2 chicken breasts, cut into strips
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 cups cooked white rice
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

    Preheat your air fryer to 375 degrees Fahrenheit.

    In a small bowl, mix the chili powder, cumin, garlic powder, salt, and pepper. Toss the chicken strips with half the olive oil and the spice blend until well coated.

    Place the chicken in the air fryer basket and cook for 8 to 10 minutes until the chicken is cooked through.

    While the chicken cooks, heat the remaining oil in a large skillet over medium high heat.

    Add the sliced peppers and onions to the skillet. Sauté them for about 5 to 7 minutes until they are soft and slightly caramelized.

    In a medium bowl, combine the cooked rice with the chopped cilantro and lime juice. Fluff with a fork.

    To serve, divide the lime rice between bowls and top with the cooked chicken and the sautéed pepper mixture.

💡 Tips

You can store leftovers in an airtight container in the fridge for up to three days. For a fun serving idea, add a dollop of sour cream, some fresh avocado slices, or a sprinkle of shredded cheddar cheese right on top.
