There is something so satisfying about the crunch of fresh lettuce wrapped around a savory chicken filling. These wraps are my favorite way to get a healthy meal on the table when I am short on time during the week.

I love to use butter lettuce for these because the leaves are soft and hold the filling perfectly. If you want a little extra zing, feel free to add a squeeze of fresh lime juice right before you take your first bite.

  • 1 tablespoon vegetable oil
  • 1 pound ground chicken
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup water chestnuts, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 head butter lettuce, leaves separated
  • 2 tablespoons crushed peanuts for garnish
  • 2 green onions, sliced

    Heat the vegetable oil in a large skillet over medium high heat.

    Add the ground chicken and cook until it is browned and no longer pink.

    Stir in the diced onion, garlic, and water chestnuts and cook for about three minutes until the onions are soft.

    Whisk the soy sauce, rice vinegar, hoisin sauce, and sesame oil together in a small bowl.

    Pour the sauce into the skillet with the chicken mixture and stir well to coat everything evenly.

    Spoon the chicken mixture into the center of the lettuce leaves.

    Top each wrap with a sprinkle of crushed peanuts and green onions before serving.

Store any leftover chicken filling in an airtight container in the fridge for up to three days. Keep the lettuce leaves separate and wash them right before you are ready to serve so they stay nice and crisp.
