There is something so satisfying about a good steak dinner. I love making this version because it gets that perfect smoky flavor from the chipotle peppers without needing an expensive grill setup.

My best tip is to let the steak come to room temperature before you start cooking. This helps it cook evenly so you get a nice sear on the outside while keeping the center tender and juicy.

  • 2 pounds flank or skirt steak
  • 2 chipotle peppers in adobo sauce, minced
  • 2 tablespoons adobo sauce from the can
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh cilantro for garnish
