There is nothing quite like a Greek beef bowl when you want something fresh but filling for dinner. I love how simple it is to season the ground beef and pile it high with all the crunchy, colorful vegetables I have on hand.

My secret for the best bowls is making sure your cucumber and tomato are chopped nice and small so you get a bit of everything in every single bite. It is a fantastic option for meal prep throughout the busy work week.

  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked white rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup tzatziki sauce
  • 1/4 cup kalamata olives, pitted

    Heat the olive oil in a large skillet over medium high heat.

    Add the ground beef to the skillet and cook until it is browned, breaking it up with a wooden spoon as you go.
