There is something so satisfying about a fresh Greek bowl filled with vibrant vegetables and tender chicken. It is a light and nutritious meal that feels like a real treat without taking all evening to put together in the kitchen.

My top tip for this recipe is to prep your cucumber and tomato salad while the chicken is in the oven. It saves so much time and ensures everything is ready to serve the moment your timer goes off.

  • 1 pound chicken breast, cut into bite sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • 1 cup cooked quinoa or brown rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup kalamata olives, pitted
  • 4 tablespoons tzatziki sauce
