My best advice is to chop your sweet potatoes into small, uniform cubes so they cook through quickly. If you want a little extra zing, a squeeze of fresh lime juice right before serving really makes the flavors pop.

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced small
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth or water
  • 2 cups fresh baby spinach
  • Fresh cilantro for garnish
