There is something so satisfying about making a classic pepper steak at home. This dish features tender strips of beef and crisp, colorful peppers cooked in a fragrant garlic and ginger sauce. It is my go to recipe when I want a hearty meal that feels special but does not keep me in the kitchen for hours.

My biggest tip for this recipe is to slice your beef against the grain. This makes the meat incredibly tender and easy to chew. Once you have everything chopped and ready to go, the actual cooking happens in a flash.

  • 1 pound flank steak, sliced into thin strips
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon cornstarch
  • 2 bell peppers, sliced into strips
  • 1 large yellow onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup beef broth
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • 2 tablespoons cooking oil

    In a small bowl, toss the beef strips with two tablespoons of soy sauce, one tablespoon of oil, and one teaspoon of cornstarch. Let this sit for 15 minutes to marinate.

    While the beef rests, whisk together the beef broth, soy sauce, oyster sauce, sugar, and the remaining cornstarch in a small jar or bowl.

    Heat a large skillet or wok over high heat with one tablespoon of oil. Add the beef in a single layer and sear until browned on all sides. Remove the beef from the pan and set it aside.

    Add the remaining tablespoon of oil to the same pan. Stir in the onions and bell peppers, cooking for about 3 to 4 minutes until they are just tender but still have a nice crunch.

    Add the cooked beef back into the pan. Pour the sauce mixture over everything and toss well.
