Easy Ice Cream Sandwich Cake
This simple freezer dessert is always a hit at parties and comes together with just four ingredients.
recipesbynani.comIf you need a dessert that looks impressive but takes almost no effort, this ice cream sandwich cake is your new best friend. It is a favorite at my house because it is cool, creamy, and always makes everyone smile when I pull it out of the freezer.
My top tip is to make sure your ice cream is slightly softened before you start layering. If it is too hard, you will struggle to spread it over the sandwiches without moving them around.
๐งบ Ingredients
- 12 ice cream sandwiches
- 1 quart cookies and cream ice cream, softened
- 8 ounces frozen whipped topping, thawed
- 1/2 cup chocolate fudge sauce
๐ฉโ๐ณInstructions
- 1
Line a 9 by 13 inch baking pan with parchment paper or plastic wrap for easy removal.
- 2
Place 6 ice cream sandwiches in a single layer at the bottom of the pan, cutting them if needed to fill in any gaps.
- 3
Spread the softened cookies and cream ice cream evenly over the layer of sandwiches.
- 4
Top the ice cream layer with the remaining 6 ice cream sandwiches.
- 5
Spread the whipped topping over the top and drizzle with the chocolate fudge sauce.
- 6
Freeze the cake for at least 4 hours or until firm before slicing into squares to serve.
๐ก Tips
To get perfectly clean slices, run your knife under hot water and wipe it dry between each cut. Keep the leftovers wrapped tightly in the freezer so they stay fresh for up to one week.
