There is something so special about sweet corn when it gets crispy in a hot pan. These fritters have a wonderful texture with a crunchy outside and a soft middle that keeps everyone reaching for seconds.

Since these are entirely vegan, they are a great crowd pleaser for any gathering. My best tip is to make sure your pan is nice and hot before you add the batter so you get that perfect golden color every time.

🧺 Ingredients

  • 2 cups fresh or frozen corn kernels
  • 1/2 cup finely diced jalapeño
  • 1/4 cup chopped green onion
  • 1/2 cup all purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon garlic powder
  • 1/2 cup unsweetened almond milk
  • 2 tablespoons oil for frying

    In a large mixing bowl, combine the corn, diced jalapeño, and green onion.

    Add the flour, cornmeal, baking powder, salt, and garlic powder to the bowl, then stir until everything is well coated.

    Heat a large skillet over medium heat and add your oil.

💡 Tips

These are delicious served with a dollop of vegan sour cream or a squeeze of fresh lime juice. If you have leftovers, keep them in the fridge in an airtight container for up to three days and reheat them in a toaster oven to bring back the crunch.
