There is nothing quite like the smell of chicken hitting a hot grill on a warm summer evening. I love using thighs because they stay nice and tender while getting those beautiful brown grill marks that everyone loves.

This marinade is super simple but brings so much flavor to the table. If you do not have Herbs de Provence on hand, feel free to swap in dried oregano or Italian seasoning. It works great every time.

๐Ÿงบ Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1/3 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons white vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon Herbs de Provence
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

In a medium bowl, whisk together the olive oil, lemon juice, vinegar, garlic, herbs, salt, and pepper.

  2. 2

Place the chicken thighs in a large resealable bag or glass dish and pour the marinade over them.

  3. 3

Seal or cover the container and let the chicken marinate in the refrigerator for at least thirty minutes, though two hours is even better.

  4. 4

Preheat your grill to medium high heat and lightly oil the grates.

  5. 5

Remove the chicken from the marinade and grill for 5 to 7 minutes per side until the internal temperature reaches 165 degrees Fahrenheit.

  6. 6

Transfer the chicken to a platter and let it rest for five minutes before serving.

๐Ÿ’ก Tips

Serve these thighs with a fresh garden salad or grilled vegetables for a complete meal. You can store any leftovers in an airtight container in the fridge for up to three days, and they taste great cold in a salad the next day.
