These little cookies are such a delight to make because they only use three main ingredients. They are the perfect size for a quick bite and look so cute on a dessert tray for St. Patrick's Day.

I love keeping this recipe in my back pocket for days when I need a treat in a hurry. My tip is to make sure your thumbprint is deep enough to hold all that yummy chocolate filling without it spilling over the sides.

๐Ÿงบ Ingredients

  • 1 cup butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all purpose flour
  • 1/2 cup green candy melts or white chocolate tinted green
  • 1/4 cup gold sugar sprinkles

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.

  2. 2

In a large bowl, cream together the softened butter and sugar until the mixture is light and fluffy.

  3. 3

Gradually add the flour to the butter mixture and stir until a soft dough forms.

  4. 4

Roll the dough into small one inch balls and place them on your prepared baking sheet.

  5. 5

Use your thumb to press a small indent into the center of each cookie ball.

  6. 6

Bake for 12 to 15 minutes or until the edges are just barely golden brown.

  7. 7

Remove from the oven and carefully press the centers again if they puffed up too much while baking.

  8. 8

Let the cookies cool completely on a wire rack.

  9. 9

Melt the green chocolate or candy melts in the microwave in short intervals until smooth.

  10. 10

Spoon a little chocolate into the center of each cookie and finish with a pinch of gold sprinkles.

๐Ÿ’ก Tips

Store these cookies in an airtight container at room temperature for up to five days. You can also freeze them for a month if you want to make them ahead of time. Serve these with a cold glass of milk for the best snack experience.
