There is nothing quite like a big bowl of jambalaya to warm you up after a long day. I love this recipe because baking the rice in the oven means you do not have to stand over the stove stirring a pot for an hour. It is a fantastic way to feed a crowd without making a huge mess in the kitchen.

Make sure you take the time to brown the chicken and sausage well before adding the other ingredients. That extra bit of color on the meat creates a wonderful foundation of flavor for the entire dish to build upon.

  • 1 pound boneless chicken thighs, cut into bite sized pieces
  • 12 ounces smoked sausage, sliced into rounds
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes, 14.5 ounces
  • 1 1/2 cups long grain white rice, uncooked
  • 3 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon Worcestershire sauce
  • Fresh parsley and green onions for garnish

    Preheat your oven to 375 degrees Fahrenheit.

    Heat the oil in a large oven safe pot or Dutch oven over medium high heat.

    Brown the chicken and the sausage until they have a nice golden crust, then remove them from the pot and set aside.

    Add the onion, bell pepper, and celery to the pot and cook until they are soft.

    Stir in the garlic, rice, tomatoes, broth, Cajun seasoning, and Worcestershire sauce.

    Return the chicken and sausage to the pot and stir everything to combine.

    Cover the pot with a tight lid and bake for 30 minutes.

    Carefully remove the lid, stir in the raw shrimp, and bake for another 10 to 15 minutes until the rice is tender and the shrimp are pink.

Store any leftovers in an airtight container in the fridge for up to three days. If you find the rice is a little dry when reheating, just add a splash of water or broth to keep it moist.
