There is nothing quite like a sheet pan meal when the weather starts to get chilly. This recipe is a favorite in my house because it fills the kitchen with such a wonderful aroma while it roasts in the oven. It is simple to put together and cleanup is a breeze since everything happens on one tray.

I love how the apples get soft and sweet alongside the savory cabbage. If you want to make it even more filling, you can serve it with some crispy smashed potatoes on the side. It is a wonderful way to use up those extra apples from your weekend picking trip and keeps the whole family happy.

๐Ÿงบ Ingredients

  • 1 pound smoked sausage or kielbasa, sliced into half inch rounds
  • 1 small head of green cabbage, cored and cut into thick chunks
  • 2 large apples, such as Honeycrisp or Gala, sliced into wedges
  • 1 medium red onion, sliced into thick strips
  • 3 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon apple cider vinegar

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Preheat your oven to 400 degrees and line a large rimmed baking sheet with parchment paper.

  2. 2

Place the chopped cabbage, sliced apples, and red onion onto the prepared sheet pan.

  3. 3

Drizzle the olive oil over the vegetables and fruit, then sprinkle with the dried thyme, salt, and pepper.

  4. 4

Toss everything together with your hands or tongs until the pieces are well coated in the oil and spices.

  5. 5

Spread the cabbage mixture out into an even layer and tuck the sliced sausages in among the vegetables.

  6. 6

Roast in the oven for about 25 to 30 minutes, tossing halfway through, until the cabbage is tender and the sausages are browned.

  7. 7

Drizzle the apple cider vinegar over the hot pan just before serving to brighten up the flavors.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. This dish reheats beautifully in a skillet on the stove if you want to keep the cabbage a bit crisp. You can also swap the pork sausage for turkey sausage if you prefer a leaner protein option.
