It is truly a quick meal to put together on a busy weeknight. If you want the chicken extra crispy, you can lightly dust the pieces in cornstarch before searing them in the pan.

  • 1 pound chicken breast, cut into bite sized pieces
  • 1 cup fresh or canned pineapple chunks
  • 1 large bell pepper, chopped
  • 1 small onion, diced
  • 2 tablespoons soy sauce

  • 2 tablespoons rice vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
