There is nothing quite like a big platter of nachos for a fun Friday night dinner. Everyone loves digging into the melted cheese and tangy pork, and it is such an easy dish to throw together when you have hungry people waiting.

My best tip for this recipe is to bake your chips for just a couple of minutes before adding the toppings. It helps keep them crunchy so they do not get soggy once you add the juicy pork and salsa.

🧺 Ingredients

  • 1 bag of your favorite tortilla chips
  • 2 cups cooked pulled pork
  • 1/2 cup your favorite BBQ sauce
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup pickled jalapeño slices
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup diced red onion

    Preheat your oven to 400 degrees Fahrenheit.

    Toss the pulled pork in a small bowl with the BBQ sauce until it is well coated.

    Spread the tortilla chips out in a single layer on a large rimmed baking sheet.

    Sprinkle half of the cheese over the chips, then add the BBQ pork and black beans on top.

    Top with the remaining cheese and the jalapeño slices.

    Bake for about 10 minutes until the cheese is bubbling and golden.

    Remove from the oven and top with red onion, a dollop of sour cream, and fresh cilantro before serving.

💡 Tips

Serve these right away while the cheese is melty and the chips are crisp. You can store any leftovers in the fridge for a day, but they are definitely best enjoyed fresh from the oven.
