Easy S'mores Cookies
These cookies capture all the gooey marshmallow and chocolate goodness of a summer campfire treat right in your own kitchen.
recipesbynani.comS'mores are truly the heart of summertime snacking. I used to struggle with roasting marshmallows over an open flame because I always ended up with them either burnt or half raw, so I decided to bring those flavors into an easy cookie form that anyone can master.
You will love that these cookies come together quickly with no chilling time required. The combination of graham cracker crumbs, melty milk chocolate, and soft marshmallows makes them a huge hit with kids and adults alike.
๐งบ Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all purpose flour
- 3/4 cup graham cracker crumbs
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup milk chocolate chips or chopped chocolate bars
- 1 cup mini marshmallows
๐ฉโ๐ณInstructions
- 1
Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
- 2
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is smooth.
- 3
Beat in the egg and vanilla extract until well combined.
- 4
Stir in the flour, graham cracker crumbs, baking soda, and salt until a soft dough forms.
- 5
Gently fold in the chocolate chips and half of the mini marshmallows.
- 6
Scoop rounded tablespoons of dough onto your prepared baking sheet.
- 7
Bake for 8 to 10 minutes, then remove the pan from the oven to press the remaining marshmallows into the tops of the warm cookies.
- 8
Return to the oven for 2 more minutes until the marshmallows are soft and slightly toasted.
- 9
Let the cookies cool on the baking sheet for a few minutes before moving them to a wire rack.
๐ก Tips
Store these cookies in an airtight container at room temperature for up to three days. If you want that fresh out of the oven taste, pop a cookie in the microwave for five seconds to soften the marshmallow again.
