This sheet pan meal has become a staple in my kitchen because it is so simple to put together. The smoky heat from the Cajun seasoning pairs perfectly with the natural sweetness of the potatoes, and everything roasts until it is golden brown and delicious.

I love that there is only one pan to wash when dinner is over. My best tip for this recipe is to cut your sweet potatoes into uniform cubes so they all finish cooking at the same time as your chicken.

๐Ÿงบ Ingredients

  • 1.5 pounds boneless skinless chicken breasts, cut into bite sized pieces
  • 2 large sweet potatoes, peeled and cubed
  • 1 large red onion, cut into wedges
  • 3 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley for garnish

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and line a large rimmed baking sheet with parchment paper for easy cleanup.

  2. 2

Place the chicken pieces, cubed sweet potatoes, and red onion wedges onto the prepared baking sheet.

  3. 3

Drizzle the olive oil over the mixture and sprinkle with the Cajun seasoning, salt, and pepper.

  4. 4

Use your hands or a large spoon to toss everything together until the chicken and vegetables are evenly coated with oil and spices.

  5. 5

Spread the mixture out in a single layer so that the ingredients have space to roast rather than steam.

  6. 6

Bake for 20 to 25 minutes, or until the chicken is cooked through and the sweet potatoes are tender when pierced with a fork.

  7. 7

Remove from the oven, garnish with a little fresh parsley if you like, and serve warm.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. If you want a little extra brightness, squeeze a fresh lemon over the tray right before serving. This meal is wonderful served as is, but it also tastes great tucked into warm flour tortillas.
